La frutta viene attentamente selezionata, pulita e sbucciata completamente a mano. Il processo di lavorazione avviene a basse temperature e in ambiente sottovuoto, preservando gli aromi e i colori naturali della frutta senza apportare alterazioni. Questi prodotti contengono una quantità straordinariamente elevata di frutta, che va dal 90% al 130% sul prodotto finito. Grazie a questa caratteristica, non è necessario aggiungere gelificanti o pectina.
